Mexican chilli bowl

500g jar Uncle Ben's Mild or Medium Chilli con Carne
2 Pouches of Uncle Ben's Mexican rice
500g extra lean minced beef
1 tbsp olive oil
100g low fat soft cheese with garlic & herbs
100g low fat natural yogurt
2 tbsp chopped fresh chives
1 red, deseeded and cut into pieces
1 yellow pepper, deseeded and cut into pieces

1. Heat a large frying pan and add the minced beef, a handful at a time, cooking it until seared and browned. Add the jar of Uncle Ben's Chilli con Carne, stir well, then reduce the heat and simmer for 20-25 mins
2. Meanwhile, make the dip by mixing together the soft cheese, yogurt and chives
3. Serve the chilli in bowls with and Uncle Ben's Mexican Express rice, together with slices of pepper to dip
